Strawberry Baked Oats
Ingredients:
- 2 punnets of strawberries (500g total)
- 2 cups rolled oats
- 1 large ripe banana
- 1 tsp vanilla essence
- 1 1/4 cup milk of choice
- 1 tsp cinnamon
- 3 tbsp hulled hemp seeds (optional, can use flax seeds or chia seeds too)
Directions:
- Preheat oven to 180 degrees Celsius.
- Set aside 5 to 6 large strawberries, and chop up the rest of the strawberries.
- In a blender or food processor, blend chopped up strawberries with milk of choice.
- In a separate mixing bowl, mash up banana, and mix in all other ingredients (oats, vanilla essence, cinnamon, and hemp seeds), then add in strawberry milk mixture and mix thoroughly.
- Grease an 8-inch square pan and pour in contents of mixing bowl into this pan.
- Slice remaining strawberries to add on top.
- Bake for 35 to 40 minutes or until all liquid has been absorbed.
- Wait for baked oats to cool before slicing into squares or finger bite sizes.
- Store in fridge for up to 3 days or freeze for up to 3 months.
